I'm so in love with this dinner. It's making me feel nourished, satisfied and happy this evening. Half of the plate was covered in a mixed green salad with cauliflower, boiled egg, cucumber, cherry tomatoes, green onions, purple cabbage, chopped bacon and homemade croutons. I made another creamy dressing, which was so easy, it's ridiculous that I haven't made creamy dressings at home before.

I placed about 4 T mayonnaise in a small jar with 1/3 C milk, about 1/4 (or more to taste) salt, dill, garlic powder, and cayenne. Place lid on jar and shake. The result is a very thin and flavorful dressing. A little goes a long way.

The shrimp was tossed in cajun seasoning and cooked in the skillet with a little olive oil and butter. The sweet potatoes were tossed with about 1 T. leftover bacon grease, sea salt, garlic and cayenne. They were roasted at 425 degrees for  20 minutes. They were fantastic. I think I prefer savory sweet potatoes so much more than sweetened ones.

Oh! Thank you guys for the exercise recommendations here and on facebook today. I pulled out my resistance bands and did a lot of arm and leg work. I'm already starting to feel sore!

We're experiencing some major wind and below zero temperatures tonight! Time to break out my quilt and boil water for a mug of tea.

    I just love my sweet potatoes baked, in the skin, with some butter, salt, and cinnamon when split. Yum.

    Your meals look awesome. I lived with a family when I was a teen, and they always made their own dressing for salad. It was mayo thinned with milk, salt and pepper, a sprinkle of sugar, and a bit of white vinegar. Simple and good.

    I like to cut up sweet potato, carrot, turnip, onion, and garlic into cubes. Then toss in olive oil, rosemary, salt, and pepper. I then roast in a 400 degree oven for 20 mins… so good!

    Great ideas. I am fixing the sweet potatoes for dinner along with Salmon cakes. Hmm, I think I will try the salad dressing as well. Your meals always look yummy!

    Just found your blog and like it very much! I am on a journey to lose 25 lb and for the last 3 years was not successful. Despite eating homemade healthy meals and working out intensely 5 times a week. Last month I started tracking calories, measuring my food (always resisted that because believed that healthy eating and exercise will be enough) and finally see results! This dinner ( shrimp, sweet potatoes, salad) looks delicious, but seems to pack at least 500 calories in it. Egg, bacon, dressing, oil for the shrimp etc. just wanted to say that being in the same boat dieting wise, when I started counting, it was really shockin to see how calories add up… breaking the meal up a bit to have snack every 2-3 hours also works well, because it tackles the hunger. Thank you for the wonderful blog!
