We got about six inches of snowfall yesterday here in Virginia! I love snow! So strange that its supposed to be in the 60's this coming weekend.

Instant pho (bo). Jean emailed me asking about the instant pho and here it is. We just stocked up on this stuff Saturday at the local oriental market in blacksburg. I love it, and only eat it in the mornings. I have no idea why, but it calls to me in the morning. It is so good! The noodles are real pho noodles, not the curly ramen noodles and the flavor is really good. 195 calories a packet and satisfies Josh's pho cravings. The closest Vietnamese place is over an hour away. ahh country living!
This is abad picture of the lasagna I made yesterday afternoon. I made it with ground chicken, whole wheat noodles, part skim riccotta, RF provolone and homemade sauce, in an 8x8 pan. I had this with a salad (not pictured) for a late lunch and then again for a late dinner. Kaye mentioned on my last post having a hard time stopping when full. I have this same problem and ate too much lasagna yesterday. This is struggle for me, but I make sure I drink lots of water while eating, something I have to do anyway and I eat slower than usual.
And then I had about 2oz. of cheap yellow tail cabernet
Yesterday was day two of my Bridal Shower Challenge. And I did the Biggest Loser Bootcamp
Josh did this with me and it was really a great workout for both of us. We did bootcamp 1 and 2 plus the warmup and cool down for a total of 45 minutes. I loved that the time was broken up and couldn't believe that 45 minutes had past, it felt like 10 minutes. It was also really entertaining and I felt like I was working out with Bob.
Speaking of Josh, he has lost over 10lbs since January! He isn't overweight, but gained about 10 lbs. after we moved to VA and is now back down to 163. He eats oatmeal pretty much every morning and always goes to the gym with me. Go Josh!

It was strange seeing my name in your blog–I don’t think that has ever happened before
Anyways, I’m still struggling with stopping when I am full…grrr. Last night had pizza and the thing is, I ALWAYS have half a frozen pizza. So to stop when I am full feels like I am cheating myself. I WANT the full half, but sometimes I know I am getting full. But I still eat it. It’s so frustrating at times.
But I am still listening to my body and trying to eat more intuitively. Today for lunch–veggie chicken patty on toast. Yum!
Hope you are having a good day. We got lots of snow too but I don’t like it as much when I have to shovel. Plus I have to go to work tonight.

oh wow…i’m always looking for good at-home workouts, i hate the gym! i think i’ll definitely give the bootcamp a try. you said the magic words, “couldn’t believe that 45 minutes had past, it felt like 10 minutes.”

I’m in NC and we only got about 2-3 inches. It was beautiful this morning but now it’s starting to look all melty and gross

I have the stopping when full problem also. It’s that clean plate syndrome kicking in I suppose.
I am doing better but sometimes I eat to the point that I am miserable. There’s just no need.
I will try drinking more water while I cook so that maybe by the time I sit down to eat I won’t be so hungry. It’s worth a try!
I might have to give Bob a try. I attempted Jillian’s 30 day shred, and it was ok but I don’t prefer her trainers attitude. It’s like having a doctor with a bad bed-side manner.

We got a lot of snow here in Northern VA too, but I had to work while just about everyone else stayed home.

Hi – I love your site; as someone always on a diet, I always get new food ideas from here. Can I tell you, it’s worth it to learn how to make your own pho soup — saves money and it’s 100% better. There are really good recipes online. It’s time-consuming but when I make a pot, it usually lasts a few days w/ my family.
Oh, I didn’t know you lived near Blacksburg! I spent 6 years there as a teen.

I think it’s great that you’ve started to journal your intake. I think there is definitely something to be said about eating what you crave. I find it always evens out, anyway. One week I am all about the carbs and then the next I am craving vegetables again. And it seems to be working for you, too!
