Always inspired by the lovely Jen at Simply Breakfast. On my sandwich: local yellow tomato, bacon, Earth Grain sandwich thin (100% whole wheat), mozzarella, local fresh basil, and local egg. And water. This is the sort of breakfast that will leave me full for hours.
(Not pictured: the strawberry SoyJoy bar I ate as soon as I woke up (not their best flavor).

That yellow tomato looks incredible! I’ve been rushed the past few days, so breakfast’s basically been me throwing a nectarine and a babybel into my purse and eating en route to work, but I eat lunch at 11 am, so I don’t usually have a big breakfast anyway.
This looks amazing, though – might try something similar for breakfast tomorrow morning!

I had an egg white “muffin”. What I do did is microwave 3 servings of 1/2 c potatoes & mash them and some pepper and garlic, take a 1/4 cup and press them into a baking cup (muffin cup)–it makes six and put that into a muffin tin. I bake until brown and crisp…like a crust. (Used too much potato last time and it didn’t get crisp enough. Then I sautéed onions, garlic and broccoli (that’s all I had would of loved to have used tomato or peppers, spinach would work if dried well.)
Ok, so then I whipped 6 egg whites until almost stiff and mixed it with the sautee. Then poured it on the crisp potato. Bake at 375 for 15-20 minutes or until golden brown on top. Viola! An egg white muffin. Delish! and a great grab and go meal, once you’ve made them.
That tomato looks amazing! I am so hungry for a yellow tomato.
I ussually eat some sort of Smoothie. My favorite is my Pudget Chocolate Peanut Butter Smoothie with spinach. It sounds gross but if you do it right you can’t even taste or tell that you have spinach in it. So, so good!
