My favorite meal has changed. Today's lunch encompasses everything that is good and happy about eating real food; it honestly doesn't get any better than this for me.
Organic/semi-local smoked salmon, local/organic butternut squash fries, local/organic spinach, local/organic tomatoes, Annie's all natural dressing.
This meal was beautiful, delicious and satisfying. Lately in our home we've been declaring meals "the best _____ ever" and it makes me feel good that we aren't content with eating sub-par food. Sure, we do and it's almost always when we eat out, but at home, for the most part, we eat well.
I am 100% passionate about eating and cooking this way, it makes me so excited that I almost can't stand myself.
The salmon was out of this world, hands down, the best. Perfectly seasoned, tender, flaky, juicy...
Our friend Matthew brought over a bucketful of squash and I honestly stared at them wondering what I would make. I recognized the butternut squash and admittedly never having it before decided to make fries. I cut them up and tossed them with a little olive oil, sea salt, garlic powder and cayenne. Baked at 425 degrees for about 25-30 minutes. I'm officially in love with butternut squash.

That sounds yum! I especially like your idea for squash fries. I’m new to cooking local, so that’s one I’ll definitely try. I made some improvised bruschetta last night from farmer’s market heirloom tomatoes, sundried tomatoes, onions, garlic, & basil, along with drizzle of EVOO & balsamic after cooking, on toasted bread. Suuuper tasty & 15 minutes.
I’ve recently rediscoverd mangoes. I’ve obviously never had a good one until just recently. It tasted as smooth as butter and out of this world sweet. Now, I can’t get enough of them and I refuse to even share them with my husband.

I’ve been obsessed with a pretty simple chicken salad lately. It’s got the normal chicken, celery, onion, light mayo, spices, but it also includes a dash of cashews which make it sweet and salty! Can’t get enough of it!
Hey, that meal looks fantastic. I was curious to know how you went about cooking that salmon it looks really well done. I’m unfortunately allergic to all fish, but my husband adores salmon. He always buys from outside and I’d love to make it for him. Thanks

I’m practically counting down the days until I can move into an apartment with a decent kitchen so that I can start cooking again. My best meal ever is probably chicken parmesean.

butternut squash fries? I may have to try those, especially since I’ve never had butternut squash and wouldn’t know what to expect when I cook it. When all else fails, making some veggies into fries can make anything taste good
Love butternut squash…roast it in the oven often…don’t really care for spaghetti squash ..maybe I’m not fixing in correctly….any ideas?

Its an eye opener when you find out that they put FOOD COLORING in regular salmon to make it look pink. Like, how crazy is that.
I am from canada, have had some amazing salmon in my time, but now that I live in las vegas it costs like, $16 a lb. Grrrr…
