I ended up eating a lot of mini-meals yesterday instead of my usual three meals. The day started with fresh orange juice mixed with pomegranate juice and theraflu because I feel a cold (second cold since December!) coming on. I'm determined to beat it.

I made a big batch of Ashley's Garlic and Greens soup and went and deleted the photo on accident. This soup was so nice in the morning, I ended up eating it for breakfast and again a couple of hours later. I had a friend over who thought the soup was amazing too. I also liked that it was so filling, yet so low in calories.  We got about five large bowls out of the recipe. Thanks Ashley, I'm making another batch today!

Here's her recipe with my small changes:

Garlic and Greens Soup

-1 head of garlic, minced (I used about eight cloves)
-1 yellow onion, finely diced
-1 tbs evoo
-1 bunch kale, bok choy, or chard, chopped into bite sized pieces (I used a bag of frozen spinach)
-3 yellow potatoes, diced, not peeled (I used three carrots)
-8 cups vegetable stock (I used chicken stock)
-1 tbs seasoned rice vinegar
-s&p to taste

* I added 1/2 C whole wheat couscous to the soup towards the end.

in a large soup pot, saute the garlic and onions in oil until transluscent. add greens, potatoes, and veg stock and bring to a boil. simmer everything about 25 minutes until the potatoes can be pierced with a fork.

Just before turning off the heat, add the rice vinegar, and s&p to taste.

A couple hours after the soup I had a serving of Noosa yoghurt with blueberries and honey. And a couple hours after that I had a croissant with strawberry jam, fresh strawberries, chicken+apple sausage, and a peanut-date ball.

A couple hours after that I had a 1 cup serving of raisin bran with whole milk. And another chicken sausage later in the evening. Lots of food!

I also did a session of the Biggest Loser Weight Loss Yoga. It did wonders for my knee and my mood.

    Just curious if there was a reason you drink whole milk? Do you do the raw thing? I stick to skim, I prefer to eat my fat ;)

    • Hi Amber- I like to avoid the added “stuff” in fat-free dairy. And I don’t mind consuming moderate fat from dairy. I also believe that fat helps our bodies to absorb more vitamins.         Hi Lori. I don’t know if its the same in USA as in the UK but here there is nothing added to skimmed milk or cheese, the cream is just skimmed off the top. I get what you are saying about having fat in your diet but that fat in dairy is super high in cholesterol unlike healthy oils like olive oil and canola oil. That’s why I have 1% milk – skimmed is just like milky water to me!

          Sorry I totally missed the link to that article! I double checked my carton of 1% and its definitely just milk! Its funny how different countries approach things in different ways.

          • Michael Pollan writes about this as well in In Defense of Food: “In the case of low-fat or skim milk, that usually means adding powdered milk. But powdered milk contains oxidized cholesterol which scientists believe is much worse for your arteries than ordinary cholesterol.”

            As far as US vs. UK in regards to food. The UK seems to have higher standards and regulations than the US. For one, high fructose corn syrup is now used. I’m nos sure how this applies to milk additives.

          • Either way, I drink whole milk about once or twice a week, not every day. I’m okay with that amount of consumption of whole milk.

  • I’m going to have to try that soup! I want (need) to eat more Kale… But I just don’t think it tastes that good. I tried making these honey kale “chips” once… I had to throw the whole batch in the trash it just tasted like burnt garbage. Yuck!! I found a recipe for a Kale salad last night that I’m going to try and blog about. It has peaches, almonds, and lots of other yummy stuff that will hopefully mask the actual taste of the kale :)

    • I’ve wanted to make my own kale chips, instead of paying like a million dollars for a small bag, but I’ve been lazy and worry too that I will burn them!

      I used spinach and think it works great in this recipe!

      That salad sounds really good, I look forward to reading your post about it.

  • So glad you liked the soup! It’s one of those endlessly variable ones, which is just so perfect for days you need to cook quickly, but are loathe to grocery shop.

    Hi Lorrie, I just made this soup for lunch. It is amazing. I added a cup or so of puréed unsweetened pumpkin to thicken it up without too many added carbs. Thanks for posting it. It is perfect for a cold winter day. Have a good one.

    I’m interested in your thoughts about the croissants. They’re really empty butterly calories. Perhaps if you replaced them with something more dense or protein loaded you would be more sustained to your next meal.
