This post is going to be all over the place, but that is kinda how my life is at the moment. I still have a few meals left from Gobble Green, but my stock is (sadly) running low! I tried the "burger" and fries with mango salsa, both were really good.
Here is what it looked like (ignore the "i need to eat this now" bites)
The burger is made up of mostly vegetables and it was greatly complimented by the mango salsa. I heated the burger up in the microwave then made is crispy in the skillet, the fries were heated up in the oven for about 10 minutes at 400 degrees. This meal has 357 calories and is totally vegan.
Another entree that I really enjoyed was the vegan spaghetti and meatballs. At 347 calories this meal was flavorful and filling. The meatballs had the texture of real meat and were crumbly vs. rubbery, which I prefer. I do wish that they would have included more sauce in the packet and overall found this dish to be even better with a sprinkle of garlic and oregano.

What else has been going on? I've been riding a bike! A few weeks ago I spoke with Joan from Super Sized Cycles in regards to letting me try out one of her bikes. I found them by searching "bikes for fat people", I know, that's a great search term, but when I found her site I had to email her. Skip forward a couple of weeks and this bike arrived on my front porch:

I've been enjoying getting back into riding again, something I haven't done in years. I was terrified when I first got on, mainly because my feet barely touch the ground when I get on. But, I've warmed up to it and have gotten used to the electric element to the bike. I was able to fly up hills, something that I cannot do on my own. I can't even make it up a slight incline on my own much less the major hills in this area.
Have you guys been on a bike recently? I have to say that I've been wanting to get on a bike for a long time now, but my weight has kept me from giving it a try. Not because of feeling out of shape as much as the fear of breaking a bike. Super Sized Cycles creates bikes especially for larger people, I can't even begin to express the freedom I feel when I'm on this bike. I feel light and active, I love it. I'll keep you posted about how my progress goes.

Another thing I'm thinking about trying is p90x workouts which say they can get you into shape in 90 days. I like the idea of doing this really intense exercise for a relatively short period of time and have it really change my whole fitness level.

This past weekend I participated in three jewelry events. One on Thursday for the Hotel Floyd Concert Series, another on Friday for the Floyd Community Market Artisan Market and then another on Saturday in my hometown for a show at my mom's house. Needless to say I had very little sleep, but it was well worth it.
I felt like this on Monday:
Mother's day weekend was so much fun, I got to hang out with my parents, sister and friends and sell jewelry. I love my mom! Check out my handmade jewelry shop.
And last but not least, we're closing on our home tomorrow!! I will try to stay updated as much as possible, but have a feeling my posts will continue to be sparse until we settle in. The internet will be installed on Monday; I can't wait to show you photos of our new home!
I also wanted to mention that I've hired a contributor to this blog. And when I say contributor I mean my best friend since first grade, Jasmine. I've been overwhelmed with the positive responses from this blog and she's come on board to help sort through emails, twitter, commenting, and the occasional blog post. I’m so jealous of your bike! I was obsessing over a bike riding the past few months as I won a bike at a company picnic and looked like a complete idiot trying to ride it- it was definitely not meant to hold my weight, and has sat in the garage ever since.

I’ve recently got back into bike riding and I LOVE IT. I am slowly getting over the nerves I have when it comes to riding my bike on the trails by my house. I remember when I was younger being able to stay upright on my bike with no hands and now, I can barely take one hand off without starting to swerve all over the place!
And I totally get the issue of trying to find the right bike. The bike I bought initially came with a seat that was not made for my big butt so I ordered a much more comfortable (and wider) bike seat.
I don’t think you looks silly at all in the bike photos. In fact, I really dig your bitchin’ shoes.
Not sure how I feel about vegetable burgers, however.
Love the bike pics! I need to get some posted soon of me cruising on my bike. I finally broke down and bought one a week ago. Actually, I bought two. A brand new one for home and a used one for work. I keep the one at work locked up so I can ride during my lunch hour. How far have you road so far? I was only able to do .94 mile and was exhausted. I sure don’t remember it being this tough when I was a kid! My thighs are burning! Love your site!

I hadnt been on a bike for around 10 years before this and found it petrifying! I was so unconfident, turning corners felt like I was risking my life, and when ever I passed people in the street I prayed that they would keep out of my way as I wasnt’ completely in control!
Its lovely getting out in the fresh air on a bike.
After a bit of practice I got used to it and can now ride at a normal speed

Not veggie or vegan though. I will say though I was a vegetarian for 8 years and for 1 of those years I was vegan. Once I started to eat meat again I packed on the pounds. Seeing positive reviews for Gobble Green worries and shocks me. It really makes me wonder who’s behind these reviews and if any or all of them are actually Gobble Green’s staff, or friends & family. It really wouldn’t shock me, and in fact it would be smart to do so. By giving the illusion that many people enjoy their food, people are more comfortable spending package prices on multiple weeks worth of food, just like I did. I read the reviews before I purchased my package, and was comfortable handing over my debit card number when the time came to order. But that was the beginning to a very unpleasant experience, to both me and my taste buds.
I am a Vegetarian of 8 year who greatly enjoys soy food and other meatless options. I also have some Vegan family members, which is what initially turned me on to Vegan food, especially the tasty deserts. I’m not much of a “dipper”, and I don’t use much salt, so it’s not as if I can’t deal with food that others might consider a little “bland”, in fact, I prefer things with a more natural taste. I love vegetables, and beans, and many foods that are associated with Vegan and Vegetarian diets. So, given this, I wasn’t reluctant at all paying for a weeks worth of was I expected to be, and described as by Gobble Green, as “cuisine” vegan food prepared by their experienced chefs.
The first day was pretty disappointing, the breakfast bar tasted like cardboard, but luckily I had peanuts and raisins to get me through until lunch. I surely kept a positive attitude and just figured there might be some dishes I may not care for. But then I had the spaghetti for lunch. The noodles were completely mushy, and the consistency of it was unbearable, so I didn’t finish the dish. I did eat the meatballs, which weren’t too bad. For dinner I had the Fettuccini Alfredo, which once again was completely mush. My husband tried to revive it with sauce and spices, but ultimately threw it away. This same experience continued on through the next couple days with similar noodle dishes, such as the Macaroni & “cheese”. All of the noodle and pie dishes were soggy, as were all the vegetables. The muffins and brownies had the consistency of chewing on sand, and crumbled to pieces at touch. The curry soup tasted like water, with rubber tofu floating in it and the rice dishes were stale, and hard. The “eggs” had a very off-putting neon yellow color to them, and were likewise inedible. The hash browns were ok, but definitely needed to be baked, definitely not microwaved.
Now this review was written after asking for a partial refund from Gobble Green. I sincerely apologized that I was writing them to pretty bluntly call their food inedible, which I stand by. I felt bad doing it, and they even asked me for details …. Reluctantly, I criticized their food dish by dish, once again apologizing but asking for SOME of money back. They said it was “against policy” as though they were some sort of Corporation and offered me a 15% discount on a future package (of which I had a coupon for anyway because they mail one with every order). I declined.
I’m really disappointed,… and I sort of feel scammed. I never felt good about asking for my money back, but really felt it was deserved. Their guarantees of the quality of food were absolutely false, and they definitely do not stand by it.
If you still want to try Gobble Green, take my advice and buy a single dish or two before diving into their very costly packages. I literally threw away $100…..
