Yummy Valentine’s

We spent Valentine’s lunch at Wildflour in Roanoke yesterday. I like the idea of a late lunch and early dinner to miss the Valentine’s Day crowds. As a result, we got a good table and fast service.

I had the tilapia gordita with sweet potato fries and spicy ketchup. A-maz-ing!

Josh had the [...]

Graham Crackers with Peanut Butter, Honey and Almonds

I made these crackers a couple of hours after lunch when I was feeling hungry again. I blame them for ruining my dinner appetite until 11pm! They were really good though. Graham cracker with natural peanut butter, honey and almonds. They were down right decadent!

.

For lunch I had a plate of my homemade [...]

Raw Fudgey Brownies

Today’s lunch was a chopped salad using up all of the vegetables I prepared a week ago. I have to say (again!) that prepping vegetables for the week increased my vegetable consumption by so much. I was able to put this salad together in less two minutes. And best of all, it was delicious [...]

Weekly Weigh-Ins Start Today

Caramel and vanilla Bigelow tea to the rescue! This is exactly what I needed last night. And my favorite quilt too.

Around 10:30 I was starving. That’s what happens when I eat dinner at 4:30. Six hours later, I’m getting close to bedtime, but my stomach is growling. I settled on two graham [...]

Sweet Potato Love

I’m so in love with this dinner. It’s making me feel nourished, satisfied and happy this evening. Half of the plate was covered in a mixed green salad with cauliflower, boiled egg, cucumber, cherry tomatoes, green onions, purple cabbage, chopped bacon and homemade croutons. I made another creamy dressing, which was so easy, it’s [...]

On The Mend

I’ve been on the couch since Thursday afternoon nursing a sprained knee. Picture me tripping over and ON  a dog. Who does that? I laugh because it’s pretty ridiculous. Thursday was the worst of the pain, Friday was better and today, while it still hurts a lot to bend my knee, I can move much [...]

Chopped

I’m going to go ahead and congratulate myself again for prepping vegetables last night. It was late, I was tried and so ready for bed, but I convinced myself to cut up all the vegetables anyway. Thank you self. I was able to throw this salad together in about five minutes. Spinach, cherry tomatoes, [...]

31 Recipes

For Floyd Imagination Month (FloCoIMo) I decided that my creative project would be baking and cooking 31 recipes. I chose this because it felt easy in a month that started with me wanting to do absolutely nothing. I would already be cooking and frankly, I knew it would be more realistic than signing up for [...]

Vegetable Kung Pao

I make vegetable kung pao with peanuts at least once a week. Josh loves it, I love it, and it’s quick and easy to make. I’m pretty sure I could make it with my eyes closed. I sauté two or three cups of celery and one chopped onion in 1-2 T sesame or olive oil. [...]

Southern Goulash

Today’s lunch reminds me of my mom and home.  I used Bobby’s Goulash as a base recipe because it’s the closest to my mom’s goulash.  My version only had one pound of ground beef, I used diced tomatoes and an open jar of spaghetti sauce, I replaced two pounds meat with 3 cups of [...]
