I Will Wear Anything

The day started with an Insanity workout, which was insane. I skipped Thursday’s workout meaning that I will have to exercise tomorrow, my usual day off , to make up for it. I’ve learned that morning exercise is the way to go for me, especially in the winter and Thursday just didn’t happen.

I [...]

Spicy Honey Chicken

We’re high-tailing it back to West Virginia this morning for our first Thanksgiving of the season. It’s like pulling teeth to get anyone in my family to let me cook, but I’ve got a few recipes I’m itching to try out. What are you making? Any new twists on traditional recipes?

This isn’t a traditional [...]

Dole Health Summit: Part Two: Real Fruit Bites and More

Lunch at Dole: whipped ginger sweet potatoes, salmon with fresh tomatoes, vegetables lasagna, roasted squash, salad and chocolate covered pineapple

One thing that stood out to me during the Dole Health Summit was how proud the employees are of their health and habits. Before I went to the Dole Health Summit I kind of [...]

Kale Pesto Recipe

I’ve had a huge bag of kale sitting in the refrigerator for two weeks. Maybe longer. I’m not sure how it even survived this long, but I purchased it with hopes that I would roast it or turn it into a delicious sausage and potato soup. Neither happened. Why do I always have high [...]

Dole Health Summit Recap: Part One

Sitting down to write this post is daunting. Mainly because there is so much to cover and much to still think about. So my solution is to break it up into little pieces and go from there.

Mini Goals

I’m determined to plow through these vegetables by Sunday.  The rest of the day was spent eating frozen foods like coconut shrimp. Not the best feeling food, but it did the job.

My [...]

What Eating Less Really Means (to me)

I’m realizing that weight loss= eating less. I already knew that, and you probably did too. But, what does that actually look like? Tonight at dinner I gave myself a challenge. The challenge wasn’t to pick the healthiest thing of the menu, or to measure everything out, or to be concerned with the calories. The [...]

Moroccan Spread

This food was at my house a week ago…

We decided, in the creative circle that I’m in, to combine themed dinners with our meetings. Last week was Moroccan and heavens it was good. Everything felt nourishing and warm. Lots of chickpeas, tomatoes, eggplant and honey. One lady tossed oranges with honey and cinnamon- brilliant!

Happiness In a Bowl

This is one of my very favorite salads. Arugula, tomatoes, avocado, sea salt, red wine vinegar and olive oil. Does it get any easier?
