I have a new love...

Don't tell Josh, but it's starting to get serious. These cremini (crimini?) mushrooms are downright life changing. I like to say everything that I love is life changing, but these guys are seriously dear to my heart. They are so rich and satisfying. That umami flavor does it for me. And cats too apparently.
I can't tell you when I first tried mushrooms, but I've know about this love for awhile now. I grew up with a mushroom (and egg!) hating mom who I can confirm would never serve mushrooms to me as per my previous post. One day I'm going to get her to love mushrooms. One day mom, just you wait!
If you too love mushrooms then this very quick and easy recipe is for you!
Ingredients:
brown butter mushrooms: 5 C. chopped cremini mushrooms, 1 t. salt, 2 T butter
creamy noodles: half package of egg noodles (4 C. cooked), 1/4 C. sour cream, 1 T butter, 1/4 t. salt, 1 t garlic powder, 1 T dried parsley (plus more for garnish), 1/2 C. chopped provolone
Directions:
Prepare egg noodles according to the package instructions. Drain and set aside.
Wash and dry mushrooms and set aside. Heat butter in a large skillet until it begins to turn brown or a light amber color. Add mushrooms to the pan, careful not to overcrowd them. Add salt and stir. Cook until tender.
Put noodles back in the pot on medium heat. Add butter, sour cream, salt, garlic powder, and parsley to the noodles. Stir until the butter is melted and the noodles are heated thoroughly.
Place noodles on a large serving platter and top with provolone cheese. Add mushrooms to the top of the noodles and garnish with parsley. Serve with a side salad and enjoy!











Just wondering you said you worked out to Insanity what is that? And is it hard to do considering your weight? Im pretty heavy and some of those workout videos are really hard for me do because of my size. Iam looking for a challenge but I want to beable to atleast do the moves .. anyhow

Hi Lorrie, love the blog. First time posting. I just made this for supper, and it is awesome. Thanks for all the wonderful food ideas, as well as the inspiring and candid thoughts you share here. I have to thank you for bringing Brain over Binge into my life, it has been truly life changing. I have dealt with BED for most of my life, and I can honestly say that since reading the book I have not taken one bite more than what my body needed. For someone who overrate at practically every meal, this is miraculous. It is amazing to be free of the shame, and be able to be passionate about food and cooking in a way that isn’t harmful. I can enjoy all foods, and listen to my body, because it really tells me what it wants and needs.
I do need to lose 80 lbs, but I am no longer afraid. I have already shed a few pounds without stress, by just understanding where the urges come from. I actually WANT to exercise now, and my body is responding to this very well. I have hope. I am the same person, but I am living a different life.

I’m so glad that you’re getting as much as I have out of Brain Over Binge- it really changed me perspective on binge eating. Not so much about being present and mindful, but not giving weight to my every whim. It’s about changing the mind, rather than suppressing it- how great is that?

I am not trying to criticize by any means but I see butter and other fatty foods sometimes in your blog. Just wondering how you manage to keep your caloric intake on the down low?
Or is this your cheat meal from time to time?

I don’t take it that way. You’re right I do use butter and other full fat products. For the most part, I just try to balance what I’m eating and always eat a salad (to take up most of my plate) with dinner.
I’m just trying not to binge or overeat. Right now, I’m focusing on eating less and eating when I’m hungry and enjoying myself in the process.
Those mushrooms look SO good! I love mushrooms, but really don’t care for noodles. I think I’d be happy just eating them without the noodles.

I love oyster mushroom. I COOK IT WITH BUTTER OR VEG OIL. My ingredients: oyster mushroom, ginger, onions, garlic, oyster sauce. hmmmmmm…yummyyyy…low calorie….
