Salmon tonight
Salmon, baby spinach w/ walnuts, tomato's and walnut raspberry dressing, light baked macaroni and cheese. This was so good! Sorry about the bad picture quality, it's so hard to get a good picture at night with energy saving light bulbs.

That meal looks fantastic. I love the fact that you are being health conscious, but not at the cost of your inner epicurian ;) What recipe did you use for the mac and cheese?
